About Molly


The years I spent in Spain and Greece nurtured my passion for healthy and tasty food. It was in Madrid that I learned to cook from patient roommates and friends. There I met my husband, Rodrigo Garcia, a chef/gardener from Argentina, who continues to expand my understanding of food, plants, and cooking.


When living abroad led to an unexpected improvement in my struggles with digestive issues (IBS), headaches and weight gain, I began to study about nutrition and digestion. Since then, I have continued to learn about nutrition and health through the lenses of modern science, Traditional Chinese Medicine and Ayurveda. 

The two years Rodrigo and I traveled together in Spain, Greece, India, and Thailand helped broaden my understanding of ancient traditional diets. We spent most of our time on organic farms and cooking in holistic retreat center kitchens, where I deepened my knowledge about the healing power of whole and plant-based foods.

I received my formal training as a health coach from the Institute for Integrative Nutrition in 2011. Some of my biggest teachers and influences include Paul Pitchford, Takis Oikonomou, Joshua Rosenthal, Dr. Walter Willett, Annemarie Colbin, Dr. T. Colin Campbell, Dr. David Katz, Dr. Mark Hyman, Geneen Roth, David Wolfe, Michael Pollan, and Dan Barber.

I live in the mountains of Cordoba, Argentina, in an eco-village called Umepay, where I work with guests who come to the retreat center, and online with clients around the world.
